PICKLED CUCUMBERS 
1 cucumber
1/2 med. onion, thinly sliced and separated into rings
1/2 c. vinegar
1/2 c. water
1/4 tsp. salt
Dash pepper

Run tines of fork lengthwise on unpared cucumber. Thinly slice cucumber into bowl. Add onion rings. Mix remaining ingredients; pour onto vegetables. Cover and refrigerate at least 1 hour. Drain before serving.

4 servings/15 calories each. (Each serving: about 1/2 cup.)
