LOBSTER IN CREME 
1/3 c. butter
2 (5 oz.) cans lobster meat or Langostinos
1/4 c. cooking sherry
2 tsp. lemon juice
1/2 tsp. salt
2 tbsp. flour
4 egg yolks
2 c. light cream

Melt butter in dish, blend in flour, slowly add cream, cook slowly, always stirring until thick. Put small amount of sauce into beaten yolks, return to hot mixture and cook until blended, don't overcook. Add meat, sherry, lemon juice and salt. Serve in pastry shells. Sprinkle with paprika.
