MINIATURE FRUIT CAKE MUFFINS 
3 eggs, separated
1 lb. dates, chopped
3/4 lb. red candied cherries
3/4 lb. green candied cherries
1 lb. pecans, chopped
3/4 c. sugar
3/4 c. flour
1/2 tsp. salt
1/2 tsp. baking powder

Beat egg whites; beat in egg yolks. Combine fruits and pecans; stir in dry ingredients. Mix well. Blend in eggs. Place batter in greased miniature muffin tins (about 2/3 full - pressed into tins).

Bake at 300 to 325 degrees for about 30 minutes. Store in a container with apple slices.
