MOTHER'S SOFT WHITE CAKE 
1/2 c. shortening (butter or Crisco)
1 1/4 c. sugar
2 1/4 c. cake flour (sift before measuring)
3 tsp. baking powder
1 c. milk
1 tsp. lemon or vanilla flavoring
4 egg whites

Cream shortening and sugar. Add flavoring then add milk alternately with flour. Fold in stiffly beaten egg whites. Bake in 2 layer cake pans at 350 degrees for 25-30 minutes.

CARAMEL ICING:

1 c. brown sugar
1/4 c. thin cream or evaporated milk
1 stick butter
2 c. confectioners' sugar

Combine sugar, butter and cream. Boil 1 minute. Add sugar. Beat and spread.
