BANANA BREAD 
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. white sugar
1 c. coconut, chopped
2 unbeaten eggs
1 c. mashed ripe bananas
1 tbsp. orange rind
1/4 c. milk
1 tsp. vanilla
1/2 tsp. almond extract
1/2 c. chopped nuts

Sift together flour, soda and salt (set aside). Cream butter and gradually add sugar. Add eggs, bananas and combine milk, vanilla and extract. Add dry ingredients and milk mixture alternately to the butter and sugar mixture. Blend thoroughly after each addition. Stir in coconut and nuts. Turn into a 9 x 5 x 3 inch pan. Well grease on the bottom. Bake for 60 to 70 minutes in a 350 degree oven. Cool thoroughly before removing from pan.
