ITALIAN SAUSAGE SOUP 
1/2 lb. Italian sausage
1/2 c. diced celery
1/2 c. diced onion
1 lg. yellow squash
3 tbsp. tomato paste
1/2 tsp. oregano
2 c. beef broth
1 (14 1/2 oz.) can whole tomatoes
1 c. cooked rotini
2 tbsp. Parmesan cheese; optional

Cut sausage into bite size pieces and saute with celery and onion until meat is browned. Use a large skillet and do not use added oil. Dice tomatoes with juice and add to meat. Add beef broth, oregano, tomato paste, and diced squash. Bring to a boil. Reduce heat to low and simmer, covered for 30 minutes. Add rotini. Spoon soup into bowls and top with cheese. Makes 2 servings.
