SPINACH RICE SOUP 
2 med. onions, chopped
50 oz. chicken broth
1/2 c. uncooked rice
1-2 (10 oz.) pkg. chopped spinach, thawed
1/4 tsp. nutmeg
1/4 tsp. butter

Stir fry onions in butter until tender, add broth. Bring to a boil; add rice, spinach, and nutmeg. Cook until rice is tender; serve.
