LASAGNE 
5 lb. Ricotta cheese
12 fresh eggs
36 (1 oz.) slices Provolone cheese
36 (1 oz.) slices Mozzarella cheese
30 oz. Italian sausage, cooked
4 c. marinara sauce
1 tbsp. Pizza shake (oregano, basil, Romano & Parmesan cheese)

Mix ricotta cheese and eggs together thoroughly.

Spread 2 cups of marinara sauce evenly over the bottom of a full size 4 inches deep hotel pan.

1. Place 1 sheet of lasagne noodle over marinara in bottom of pan.

2. Cover noodle with 2 pounds of ricotta mixture.

3. Place twelve 1 ounce slices of provolone and twelve 1 ounce slices of Mozzarella evenly over ricotta mixture.

4. Cover cheese with 15 ounce of pizza sausage.

5. Repeat steps 1 - 4.

6. Repeat steps 1 - 3.

7. Cover top with 1 sheet of lasagne noodle.

8. Cover evenly with 2 cups marinara and sprinkle shake over top.
