BROCCOLI STUFFED TOMATOES | |
6 med. tomatoes Salt and pepper to taste 1 (10 oz.) pkg. frozen chopped broccoli 1 c. Swiss cheese, shredded 1 c. soft bread crumbs 1/2 c. mayonnaise 2 tbsp. onion, chopped 2 tbsp. grated Parmesan cheese Wash tomatoes. Cut off top and scoop out pulp, leaving hull intact. Sprinkle cavity with salt and pepper. Invert and drain 30 minutes. Preheat oven to 350 degrees. Cook broccoli according to package directions. No salt. Drain. Combine broccoli with cheese, bread crumbs, mayonnaise, and onion. Blend well. Spoon broccoli mixture into tomato shells and sprinkle with Parmesan cheese. Bake for 30 minutes (until done). Serve hot. |
