BROCCOLI SOUP 
5 c. water
2 tbsp. chicken soup base (Spice Islands)
1/2 med. onion, cut fine
2 tsp. butter
3 c. broccoli
1/4 tsp. oregano
1/4 tsp. sweet basil
1/4 tsp. salt
1/4 tsp. pepper

Bring water and soup base to a boil. Saute onion in butter. Add broccoli, oregano, sweet basil, salt and pepper. Add onion and broccoli mixture to boiling water. Make a roux of 1 stick butter and 1/2 to 3/4 cup flour. Stir roux into boiling mixture. Turn off soup and allow to cool slightly. Just before serving add 1/3 cup whipping cream.
