ONION SHORTCAKE 
1 onion
1/4 c. butter
1 1/2 c. corn muffin mix (Jiffy)
1 egg, beaten
1/3 c. milk
1 c. cream style corn
2 drops Tabasco
1 c. dairy sour cream
1/4 tsp. salt
1/4 tsp. dill
1 c. sharp Cheddar, shredded

Slice onion and saute. Set aside. Combine muffin mix, egg, milk, corn and Tabasco. Put batter in greased 8-inch square pan. Add sour cream, salt, dill and 1/2 cup cheese to onions. Spread over batter and sprinkle with remaining cheese. Bake in preheated 425 degree oven for 25 to 30 minutes. Serves 6.
