TOMATOES ROCKEFELLER | |
12 thick tomato slices 10 oz. pkg. frozen chopped spinach 1/2 c. soft bread crumbs 1/2 c. seasoned bread crumbs 1/2 to 3/4 c. finely chopped green onions 1/2 tsp. salt 1/2 tsp. thyme Hot sauce to taste 3 eggs, slightly beaten 1/4 c. melted butter 1/4 c. grated Parmesan cheese 1/2 tsp. minced garlic Arrange tomato slices in lightly greased 9 x 13 inch glass dish. Set aside. Cook spinach and drain well; squeeze to remove all excess water. Add all other ingredients and stir well. Mound mixture onto tomato slices. Bake about 15 minutes at 350 degrees until spinach topping is set. Makes 12 servings. |
