BAKED SOY BEANS | |
2 c. dry soy beans Water to cover beans for soaking 1 med. onion, chopped 1 oz. can tomato paste 2 tbsp. vegetable oil 1 tsp. salt 3 to 4 big franks or linkettes, sliced (these are vegetarian frankfurters) Pick through beans before washing thoroughly. Soak overnight in plenty of water about 1 1/2 quarts. Wash again and put in slow cooker with enough water to cover beans and more than 1/2 inch cook on slow 24 hours or on high 8 hours. If you use high you will need a little more water. When the beans are cooked you want only enough broth to cover them. Saute onions in oil 3 to 5 minutes. Add to soy beans. Add salt and tomato paste. Mix well. Add frankfurters. Pour into baking dish. Bake at 325 degrees for 2 to 3 hours. If you like the beans dry bake uncovered. If you like them soupy, bake them covered or add extra water. |
