BAKED LENTILS (FAKE BAKED BEANS) 
1 c. dry lentils, soaked (over 24 hours)
2 1/2 c. water
1/2 c. onion, chopped
1 tsp. salt
2 tbsp. molasses
2 tbsp. ketchup or to taste
2 tbsp. brown sugar or honey
1/2 tsp. dry mustard
2 pieces bacon, fried and cooled (optional)

Put lentils in 2 1/2 cups water with onion and salt. Bring to boil. Simmer 45 minutes. Add onion, salt, molasses, ketchup, sugar or honey, mustard and bacon. Pour into 1 quart casserole. Bake at 350 degrees for 1 1/4 hour.

Very nice, I substituted BBQ sauce for ketchup and used peppered bacon. I only boiled the lentils for 15 min and baked for 1 1/2 hours. Used French and English lentils and used a red onion. Used buckwheat honey and stone ground mustard (2 tbsp.) Served with sour cream on top. Delicious!!!
