CHICKEN DIJON 
1/2 c. Dijon mustard
2 tbsp. honey
2 tbsp. lime juice
1/3 c. water
3/4 tsp. ground coriander
1 1/2 tsp. grated lime peel
4 sm. boneless, skinless chicken breasts
Lettuce leaves
Lime wedges
Chopped fresh cilantro (optional)

Preheat oven to 350 degrees.

Whisk together mustard, honey, lime juice, water, coriander and lime peel.

Place chicken in shallow pan. Set aside 1/4 cup mustard sauce. Pour remaining sauce on chicken. Cover and bake 20 minutes, uncover, spoon sauce from casserole on top and continue to bake, uncovered, for 10 minutes or until completely cooked.

Arrange chicken on lettuce leaves.

Add remaining sauce from casserole to reserved sauce and heat through. Pour sauce over chicken and serve with lime wedges.

Sprinkle with chopped cilantro. Makes 4 servings.
