MICROWAVE CHOCOLATE PUDDING 
2 c. skim milk
1/2 c. sugar
3 tbsp. cornstarch
1 lg. egg white
1 lg. egg
1 oz. sq. unsweetened chocolate broken into pieces
1 tsp. vanilla

In a microwave-safe bowl, with wire whisk, beat milk, sugar, cornstarch, egg white and egg until well blended. Add chocolate. Heat in microwave on high uncovered 5 minutes. With wire whisk beat mixture until smooth. Continue to heat in microwave on high 4 minutes longer.

Beat in vanilla pudding should have the consistency of sour cream. If not heat 1 minute longer. Cover and refrigerate until well chilled. Makes 4 servings, 220 calories each.

Since microwave ovens vary in power, you may need to adjust your cooking time.
