SWEET POTATO SOUFFLE 
SOUFFLE:

2 cans of 16 oz. yams
3/4 c. sugar
2 eggs
1/2 stick butter, softened
3/4 c. milk
1/4 tsp. nutmeg
1/2 tsp. cinnamon

TOPPING:

1/2 stick butter
1/2 c. chopped pecans
1/2 c. brown sugar
3/4 c. crushed corn flakes

Makes an excellent dish for Thanksgiving dinner. Combine all souffle ingredients with electric mixer. Beat well. DO NOT SCRAPE beaters (strings cling to beaters). Pour into baking dish and bake 45 minutes at 325 degrees. Add topping last 15 minutes of baking time.

To make topping, melt butter and brown sugar. Then add nuts and corn flakes. Spread over top of souffle for last 15 minutes of baking.
