LEMON POUND CAKE 
2 c. all purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 c. butter (soft)
1 1/2 c. sugar
5 eggs
2 tsp. lemon extract
1 tbsp. lemon juice
1 tsp. freshly grated lemon zest

Preheat oven 325°F. Grease loaf pan and lightly dust with flour; shake out excess.

Sift together flour, baking powder, and salt. Cream butter until fluffy, gradually adding sugar.

Add eggs one at a time, beating well after each addition.

Add flour mixture, lemon and zest (peel).

Pour in prepared pan.

Bake for 1 hour and 10 minutes or until cake tests done (toothpick inserted in center of cake comes out clean).
