APPLESAUCE CAKE 
1 3/4 c. thick, chunky applesauce
2 c. light brown sugar
1 apple, cut up
1 c. vegetable shortening
1 egg
3 c. flour
1 tsp. salt
1 tbsp. (level) soda
1 lb. raisins (mix into flour mixture)
1 tbsp. cinnamon
1 tbsp. vanilla
3/4 c. walnuts, optional

Bake at 350 degrees for 50 minutes. Beat sugar and shortening; add eggs, beat in well. Add applesauce. Set aside. Mix all dry ingredients well and add to first mixture (add raisins to the flour mixture). Add nuts.

CARAMEL FROSTING:

2 c. light brown sugar
1/2 c. water
1 tbsp. butter (oleo)
Pinch salt

Bring to boil. Drop into cold water. It's done when it forms a ball. Frost when cooled to spread easily. Top with walnuts.
