NOODLES (Kluski) 
2 1/4 c. sifted flour
2 eggs, lightly beaten
2-3 tbsp. water
1/2 tsp. salt

Add eggs and salt to flour and work on a pastry board, adding a little lukewarm water to make elastic dough. Add more flour if necessary. Work until little bubbles begin to form in dough. Divide in two, roll out very thin on floured board, and sprinkle with a little flour to help dry. Let stand a few minutes; then roll up as for jelly roll and cut into strips. Cook in salted boiling water 5 to 10 minutes, according to thickness. Drain and serve at once. Makes about 8 ounces. Serves 6.

BAKED NOODLES WITH CHEESE (Kluski Wypiekane)
Recipe for noodles (above) or 8 oz. pkg. broad noodles
12 oz. container farmer or cottage cheese
2-3 egg yolks
Butter and bread crumbs
1 c. sour cream
Salt and pepper to taste

Prepare noodles according to directions. Drain. Mix with cheese and arrange in well buttered casserole lined with bread crumbs. Combine egg yolks and sour cream and pour over the noodle and cheese mixture. Top with 2 to 3 tablespoons drawn butter and bake in 350 degree oven for 25 to 30 minutes, or until edges are brown. Serves 6.
