JELLY-JAM MUFFINS 
2 c. flour
3 tsp. baking powder
1 c. milk
1/4 c. melted shortening
1/4 c. sugar
1 tsp. salt
1 egg
Your favorite jelly or jam

Heat oven to 400 degrees. Grease 12 muffin pan cups. Mix flour, sugar, baking powder, and salt into bowl. Add milk, egg, and shortening. Stir just to moisten dry ingredients. Batter will be lumpy. Fill muffin cups half full; add 1 teaspoon jelly or jam; add enough batter to fill cups 2/3 full. Bake for about 20 minutes or until golden brown. Remove from pan, cool on wire rack.
