CRISPY OATMEAL COOKIE 
1 c. white sugar
1 c. brown sugar
1 c. shortening or butter
1 tsp. vanilla
2 eggs
1 tsp. baking soda
1 tsp. baking powder
1 c. coconut
1 1/2 c. flour
2 3/4 c. oatmeal

Cream together sugars, shortening, vanilla and eggs and mix well. Combine together flour, soda, baking powder, coconut and oatmeal. While stirring by hand add dry ingredients to first mixture and mix well. Chill slightly. Roll into balls and flatten or drop by teaspoon onto ungreased cookie sheet. Bake at 375 for 6-8 minutes.
