CRISPY OATMEAL RAISIN COOKIES | |
1 c. (2 sticks) unsalted butter, softened 1 c. brown sugar, firmly packed 1 tsp. vanilla 1 tsp. baking soda 1/2 tsp. salt (optional) 1 c. raisins 2 large eggs 1/2 c. granulated sugar 1 1/2 c. all-purpose flour 1 tsp. cinnamon 3 c. old fashioned oatmeal Heat oven to 350°F. Soak raisins in rum. Beat together the butter and sugars until creamy. Add eggs and vanilla and beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins and mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or longer for more crispy cookies. Cool 1 minute on cookie sheet; remove to wire rack. Makes about 4 dozen. |
