OATMEAL HAWAIIAN BREAD 
4 eggs
1 1/2 cups sugar
2 1/2 cups all-purpose flour
2 tsp. salt
2 tsp. baking soda
1 1/2 cups oatmeal
1 (20 oz.) can crushed pineapple, drained (about 2 1/2 cups)
10 oz. flaked coconut (about 3 cups)

Combine eggs and sugar, beat until light. Sift flour, salt and baking soda and add to egg mixture. Blend until smooth. Add remaining ingredients and mix well. Spoon into two greased 9x5-inch loaf pans. Bake at 325°F for 1 hour. Remove immediately and cool.
