ZUCCHINI BREAD 
3 eggs, beaten
2 c. sugar
1 c. salad oil
3 tsp. vanilla
2 c. raw zucchini, grated
3 c. plain flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
1 c. chopped nuts

Beat together eggs, sugar, oil and vanilla. Add remaining ingredients and mix well. Grease 2 loaf pans. Bake 1 hour or until done, 325 degrees.
