OVEN APPLE BUTTER | |
8 qt. water 2 tbsp. salt 6 lb. apples, peeled & sliced 3 1/2-4 c. sugar 1 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. allspice 2 qt. sweet apple cider Combine water and salt. Peel and slice apples into water. Drain well, but do not rinse. Put apples through blender with enough cider to blend well. As you go dump into a large enamel pan. Add remaining cider and spices. Center pan in oven at 350 degrees. Simmer 3-3 1/2 hours until cooked down about half and is thick and mushy. Be sure to stir every half hour, good. Add sugar and return to oven. Continue cooking about 1 1/2 hours. To test, put small amount on cold plate. No liquid should ooze around edge. Put in sterilized jars and seal. Water bath 10 minutes (boiling). Should make about 2 quarts. This is a real thick brown apple butter and the kids and everyone else love it. |
