SALMON CROQUETTES 
2 sm. cans pink salmon
1 sm. white potato
1 sm. onion
1 tsp. seafood seasoning
Vegetable oil
Plain bread crumbs
1 dash sea salt
1 dash black pepper
2 eggs

Dice potato and onion; boil 5 minutes.

Beat eggs and flake salmon, removing all bones. Mix eggs into salmon. Add bread crumbs, potato and onion. Mix well using all liquids from can. Form round cakes; fry in vegetable oil until brown.
