CHICKEN PARMEGIANA 
2 c. Italian bread crumbs
3-4 eggs
1 (30 oz.) jar plain spaghetti sauce
1 (6-8 oz.) pkg. part-skim/low moisture shredded Mozzarella cheese
1 lb. boneless chicken breast

Preheat oven to 350 degrees.

Dip chicken into egg and then coat with bread crumbs. Place coated chicken into skillet with melted and warm shortening. Fry chicken until lightly browned on both sides. Place browned chicken into baking dish. Smother chicken with spaghetti sauce.

Cover pan and bake at 350 degrees for 55 minutes. Remove chicken from oven. Uncover. Coat chicken with Mozzarella cheese and place uncovered in oven for 10 more minutes. Remove and eat. Serves 2-4 people.
