CHEESE COOKIES 
12 oz. New York sharp Cheddar cheese, grated
1 stick butter, softened
1 c. plain flour
1/2 tsp. salt
1/8 tsp. red pepper
1/2 c. finely chopped pecans

Mix all ingredients by hand. Make into 2 rolls, about as big around as a quarter. Roll in wax paper and chill 24 hours. Slice very thin and bake at 375 degrees on greased cookie sheet until lightly brown.
