CHEESE-COATED EGGPLANT 
1 med. eggplant
3 tbsp. butter, melted
1/4 c. Parmesan cheese
1/2 c. seasoned bread crumbs
1/2 tsp. salt
1/4 tsp. pepper
2 tsp. parsley

Cut eggplant into 1/2 inch slices. Soak in salted water for 30 minutes. Drain and dry. Combine cheese crumbs and seasoning. Dip slices in melted butter, then crumbs and place in single layer in greased 9 x 13 baking dish. Bake at 350 degrees for 20 minutes or until golden brown.
