PARTY POTATOES 
5 lbs. potatoes, peeled
1/2 c. butter
1 (8 oz.) pkg. cream cheese, softened
1 c. sour cream
1/2 c. Parmesan cheese
4 green onions, chopped
1/2 tsp. pepper
Salt to taste

Boil potatoes until tender. Mash while hot. Add butter and cream cheese. Add remaining ingredients and stir just to combine. Serve. (If not serving within an hour, refrigerate. One hour before serving, remove from refrigerator. Bake uncovered for 30 minutes at 350 degrees to heat through.) 10-12 servings.
