TATER CRISP CHICKEN 
1 chicken (3 lbs.), cut up
1/4 c. salad oil
1 c. instant potato flakes
1/2 tsp. salt
1 tsp. pepper

Preheat oven until 400 degrees. Wash and pat chicken dry. Pour oil into 13 x 9 x 2 inch pan coating the bottom evenly. In plastic bag, combine potato flakes, salt, and pepper. Add chicken 1 piece at a time until coated, put in pan. Bake one hour.
