DEB'S PICKLED HAM 
2 c. cooked ham, cubed
1 med. onion, diced
3/4 c. water
1/2 c. vinegar
1 1/2 tsp. mixed pickling spice
1 tsp. sugar
1/4 tsp. whole black pepper

In a bowl, mix ham and onion. In a saucepan, heat the water, vinegar, pickling spice, sugar and pepper until simmering. Pour over ham mixture. Cover and chill overnight. To serve, drain off liquid. Makes 3 cups.
