GRAPEFRUIT DELIGHT 
1 env. gelatin
1/4 c. water
2 grapefruits, preferably pink or red
4 tbsp. sugar; 2 tbsp. sugar
2 egg whites
1/2 tsp. vanilla

Soften gelatin in water; dissolve over hot water. Section the grapefruits into a strainer, catching the juice. There should be 1 cup of sections and 1 cup of juice. Dissolve the 4 tablespoons sugar in the juice and add to the gelatin. Chill until it thickens. Stir in the grapefruit sections. Beat the egg whites, adding the 2 tablespoons sugar; beat until stiff. Add the vanilla and fold into the gelatin mixture. Pour into a 1 quart mold or dessert dishes and chill.
