PUMPKIN MUFFINS | |
1 c. pumpkin 2 eggs 1/2 c. grated carrots 4 tbsp. raisins 1 tsp. vanilla 8 pkgs. Sweet 'n Low 2/3 c. non-fat dry milk 2 tsp. pumpkin pie spice 1 tsp. cinnamon 6 tbsp. flour 1 tsp. baking soda Combine dry ingredients. In a separate bowl, combine beaten eggs and vanilla. Add pumpkin and mix well. Add dry ingredients, carrots and raisins. Spray muffin tins with non-stick spray. (DO NOT USE PAPERS.) Bake 15 minutes at 350 degrees. NOTE: I like to use the small muffin tins. |
