OATMEAL MUFFINS 
2 c. oats
2 c. sour cream
2 c. flour
2 c. packed light brown sugar
1/2 tsp. salt
2/3 c. melted butter
4 eggs
2 tsp. baking powder
1 tsp. baking soda
Raisins (optional)

Combine oats and sour cream. Stir in melted butter, eggs, and sugar until well blended. Sift together flour, baking powder, soda and salt. Stir into oat mixture just until blended. Divide into two greased twelve-cup muffin pans. Sprinkle lightly with more oats if desired.

Bake at 375 degrees 20-25 minutes or until done. Turn out onto wire rack. Makes two dozen.
