HAM BASIL QUICHE 
1 (9 inch) pie shell pastry, prebaked

FILLING:

1 c. smoked or cooked ham, diced
1 c. grated Mozzarella or Jack cheese, grated
1 tbsp. chopped fresh basil, or 1 tsp. dried basil
1 tbsp. mustard
3 eggs
3/4 c. whipping cream
1 tbsp. Parmesan cheese

Prebake pie shell for 5 minutes at 400 degrees. Mix together ham, grated cheese and basil. Spread mustard on bottom of prebaked pie shell. Sprinkle with ham and cheese mixture. Beat eggs, cream and pepper. Pour over ham mixture in pie shell. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees for 30 to 35 minutes until filling is set and slightly browned.

Garnish with sliced cherry tomato and fresh basil or parsley.
