CHOCOLATE CHIP MUFFINS 
3 cups all-purpose flour
2/3 cup granulated sugar
1/2 cup packed brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
4 eggs
1 cup (2 sticks) butter, melted
1 cup milk
1 tsp. vanilla extract
1 cup chocolate chips

Preheat oven to 375°F.

In a large bowl, mix flour, sugar, brown sugar, baking powder, baking soda, and salt. Set aside. In a separate bowl, beat the eggs. Stir in melted butter, milk, and vanilla. Add to flour mixture, stirring just until dry ingredients are moistened. Stir in chocolate chips. Spoon batter into muffin cups, filling each about 2/3 full.

Bake at 375°F for about 16-20 minutes. If I bake them for longer than 16 minutes, they get dry. Serve warm.
