YUMMY CHOCOLATE CHIP MUFFINS 
1 egg
1/2 cup milk
1/3 cup vegetable oil
1/2 cup sugar
1 1/2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup mini semi-sweet chocolate chips

Preheat oven to 350°F. Grease a 12-cup muffin pan. Set aside.

Beat egg in a large bowl until frothy. Beat in milk and oil, about 2 minutes.

Mix sugar, flour, baking powder and salt together in a separate bowl. Add to egg mixture, mix just until moistened.

Fold in chocolate chips. Fill muffin cups 2/3 full.

Bake at 350°F for 20 minutes or until muffins are golden brown and a toothpick inserted in center comes out clean.

Serve muffins while still warm!
