CORN MUFFINS 
1 c. whole wheat flour
1 c. corn flour or corn meal
4 tsp. baking powder
1/2 tsp. salt (if desired)
1/4 c. sugar
2 eggs, lightly beaten
1 c. skim or lowfat milk
1 c. cream-style corn or whole kernel
3 tbsp. butter, melted

In a large bowl, combine flours (corn meal), baking powder, salt and sugar.

In medium bowl, combine the eggs, milk, butter and corn. Add this to flour mixture, stirring them just until the dry ingredients are moistened.

Spoon the batter into 12 greased muffin cups. Bake in preheated oven for 20-25 minutes or until the tops are golden.
