RUM-BOURBON DEEP FRIED SEA BASS 
4 fillets sea bass
oil, for frying

BATTER:

3 cups all-purpose flour
1 1/2 cups milk
2 tbsp. light rum
1 tbsp. bourbon

EQUIPMENT:

deep fryer
electric countertop mixer

In mixer mix milk and flour on medium speed for 30 seconds. Add rum and bourbon. Mix in mixer for 1 minute on low.

Dip fish in batter. Shake off any excess. Put in deep fryer and cook for 4 minutes. Remove and place on paper towels. Repeat until all fish is fried.

Makes 4 servings.
