ITALIAN CREAM CHEESE 
1 stick butter
2 c. sugar
2 c. plain flour
1 c. buttermilk
1 tsp. vanilla
1 c. coconut
1/2 c. Crisco
5 eggs, separated
1 tsp. baking soda
3/4 c. chopped nuts

Cream shortening, butter, sugar until smooth. Add 5 egg yolks. Sift flour and soda and add to sugar mixture. Add buttermilk and beat well. Beat in vanilla, nuts and coconut. Fold in stiffly beaten egg whites. Pour into three 9 inch greased and floured cake pans. Bake at 350 degrees for 25 minutes. Remove from oven; let cool.

CAKE ICING:

1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 stick butter
1 box powdered sugar
3/4 c. chopped nuts

Blend all ingredients and fold in nuts. Spread between layers of cooled cake.
