STUFFED PASTA SHELLS 
SAUCE:

1 lb. ground beef or Italian sausage
1 lg. can tomato paste
1 lg. can tomato sauce (Italian style)
1 1/2 c. water
1/2 lb. sliced mushrooms
1 green pepper, diced
1/4 to 1/2 onion, diced
1 tsp. garlic powder
1 tsp. oregano
1 tsp. sweet basil
1 tsp. sugar
1/2 tsp. pepper or to taste

1 c. shredded Mozzarella 1/4 c. Parmesan cheese

FILLING:

16 oz. ricotta cheese
2 eggs, slightly beaten
1 c. Mozzarella cheese, shredded
1 c. Cheddar cheese, shredded
1/4 c. grated Parmesan cheese
1/2 tsp. oregano
1/2 tsp. garlic powder

Brown ground beef or sausage and drain and set aside. Mix together tomato paste, sauce, water, mushrooms, green pepper, onion, spices. Add meat. Simmer 1 to 1 1/2 hours covered.

Cook pasta shells as directed on package.

Mix together filling ingredients. Stuff cooked shells. Pour sauce over shells. Sprinkle with Mozzarella and Parmesan cheese. Heat in oven or microwave until cheese melts. 8-10 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
