SPINACH - CHEESE CASSEROLE 
1 pkg. frozen chopped spinach (thawed and drained)

Beat 2 eggs and mix in 1/2 carton cottage cheese and salt and pepper to taste. Mix in 1/2 cup chopped American cheese and stir until mixed with fork. Then add spinach.

Put in baking dish and put chunks of butter on top and in corners. Lay strips of American cheese across top. Bake for 30-35 minutes until it is not soupy at 325-350 degrees.
