POTATO SOUP | |
1 ham shank 1 sm. onion, chopped 1 stalk celery 1 qt. cold water 1 qt. diced potatoes 3 tbsp. parsley, chopped 3 tbsp. butter - 3 tbsp. flour 1 qt. milk Salt and pepper Place ham bone, onion, celery and water in pot. Cover and bring slowly to a boil. Simmer gently about 1 hour. Remove bone, trim off meat, dice meat and add to stock. Add potatoes and half the parsley. Boil gently about 20 minutes or until potatoes are soft. Make a white sauce of butter, milk and flour. Add to stock and season to taste. |
