OVEN CHICKEN AND LINGUINE | |
1/4 c. butter 2 cloves minced garlic 1 med. sliced thin onion 1 tbsp. basil 1/2 tsp. crushed red pepper 8 chicken thighs 2 pkgs. chopped frozen spinach 8 oz. linguine 1 c. grated Parmesan cheese 1 sm. unpeeled, quartered orange Melt butter in 10 x 15 rimmed baking pan in 400 degree oven. Stir onion, garlic, basil, and pepper into butter. Place chicken skin down in butter mixture; then turn over. Bake uncovered about 45 minutes. While chicken bakes, thaw spinach, place in 2 - 3 quart baking dish; cover and set in oven for 30 minutes. Drain. Cook linguine. When chicken is done, lift from pan and keep warm. Add spinach to pan and stir to scrape browned bits free. Add pasta and cheese, lift with 2 forks to mix well. Before eating squeeze orange over chicken and pasta. |
