WILD RICE CASSEROLE 
1 (6 oz.) pkg. long grain and wild rice mix
1/2 c. chopped onion
1/2 c. chopped celery
2 tbsp. butter
1 can condensed cream of mushroom soup
1/2 c. sour cream
1/2 tsp. curry powder
2 c. cubed cooked ham or turkey
Parsley flakes

Prepare rice according to package directions. Meanwhile, in a saucepan, cook onion and celery in butter until tender but not brown. Blend in soup, sour cream and curry powder; stir in ham or turkey and cooked rice mix. Turn mixture into 12x7x2 inch baking dish. Bake uncovered at 350 degrees for 35-40 minutes. Stir before serving. Garnish with parsley.
