PARKER HOUSE ROLLS 
1 c. milk
5 tbsp. sugar
1 tbsp. salt
1 cake yeast
1 c. lukewarm water
6 c. flour
6 tbsp. melted shortening

Mix cooled milk with sugar, salt and yeast, which has been dissolved in lukewarm water. Add enough flour to make a batter, beat hard until smooth. Add shortening, beat again. Add rest of flour.

Let rise until doubled in bulk. Shape into rolls by rolling out on floured board, cut into rounds, spread with melted butter, crease with a table knife. Let rise until light. Bake in a moderate oven until golden brown.
