PEACH BUTTER 
4 1/2 c. prepared fruit
1/4 c. brown sugar
1/4 tsp. lemon rind
1/4 tsp. cinnamon
1 box fruit pectin
5 1/2 c. sugar
2 tbsp. lemon juice
1/2 tsp. ginger
1/8 tsp. cloves

Peel and pit peaches, chopping very fine or grind. Bring to a boil and simmer uncovered, for 10 minutes. Put fruit pulp through a sieve. Measure 4 1/2 cups into a large saucepan. Mix in fruit pectin. Place over heat and stir until mixture comes to a hard boil. Add sugars and stir. Boil 1 minute, stirring constantly. Remove from heat and trim off foam with metal spoon and put into jars and seal.
