11 med. cucumbers 6 c. sugar 2 tbsp. mixed pickling spice 5 tsp. salt 4 c. vinegar Cover whole cucumbers with boiling water. Allow to stand overnight. Next morning, drain. Repeat process for next 3 mornings. On the 5th day, drain well. Slice in 1/2 inch slices. Make syrup, combining other 4 ingredients. Bring to boil. Pour over cucumbers. Let cucumbers stand in syrup 2 days. On 3rd morning, bring to boil and seal in hot jars. 10 pints. |
